Slow Food launches a petition and creates a Presidium to save one of England's oldest cheeses.

Stilton, one of the noblest and oldest English cheeses, is currently produced by six large dairies that blend milk from various farms and produce over a million wheels of cheese each year, pasteurizing the milk in accordance with the requirements imposed by the PDO.

Slow Food has therefore launched a petition to the entire movement in Europe and around the world and has decided to establish a Presidium for the defense of traditional raw-milk Stilton production. The goal is to validate Joe Schneider's request and ask the UK Department of Agriculture to support his request to amend the production regulations, thus allowing those who process raw milk to be included in the PDO.
